In the collection of scientific works the short characteristic of technological shits connected with change of technological way in the industrial fruit growing is given. The actual problems of increase in efficiency of innovative processes in branches of fruit and wine growing are presented. The issues of formation of steady highly agric cenosises and ampelocenosises on the basis of improvement of assortment and increase of adaptation potential of fruit and berry crops, the optimization of their placement are considered. The results of research of influence of agric-chemical and technological methods on productivity and quality indicators of production under the intensive conditions cultivation of fruits and grapes crops are presented. The dates of studying of a specific diversity of harmful organisms in the planting and estimation of plants resistance the major biotic factors are adduced; the attention is emphasized on biological control and ecologization of protective measures.The features of production technology of high-quality wines and cognancs corresponding to the requirements of food safety are reflected.
